I can’t stop posting breakfast recipes and I’ll never be upset about that 😌 Really though — gimme all the waffles please and thank you! These pumpkin and pecan waffles from @eatevergreen are so fluffy and flavorful with pumpkin, pecan, and all the warm spices 🥰 Nothing warms up a chilly morning quite like these — I don’t know what it is, but everything smells and tastes better on cold days 🤤

Instructions

Add the diced apples to a small saucepan over medium-high heat. Add coconut oil and maple syrup, mix and let bubble around for a couple of minutes (correcting obvious typo from 'months'). Add the vanilla and cinnamon, mix, and continue to let it bubble until it has thickened and the apples are soft and tender.

Mix together the Greek yogurt and honey in a small bowl. 

Heat up the waffles according to their package instructions.

Top with the cinnamon apple mixture, honey Greek yogurt mixture, and granola.
