What you need

cup dark chocolate chips

cup rolled oats

tsp salt

tsp baking soda

cup gluten free all purpose flour

tsp vanilla extract

brown egg

banana

cup light-brown sugar

tbsp vegan margarine
Instructions
Preheat oven to 325F. Grease a 9-inch cast iron skillet with cooking spray, or line it with parchment paper. In a large bowl, using a hand mixer, beat together the butter and brown sugar until fluffy. Add in the mashed banana, egg yolk, and vanilla extract, and beat until well combined. In a separate medium bowl, whisk together the flour, baking soda, and salt. Add it to the large mixing bowl, and beat until just combined. Then, stir in ¾ cup oats and ⅓ cup chocolate chips of choice. Spread half of the dough in the bottom of the prepared cast iron skillet. Then, spread the cinnamon roll granola butter on top of the dough. Dollop the remaining dough on top of the granola butter and spread. Then, sprinkle the remaining oats and chocolate chips on top. Bake for 40-45 minutes (if it starts to get too brown, cover with aluminum foil). Let cool before slicing. Serve with dairy free vanilla ice cream if desired. Enjoy!View original recipe
