Instructions
Start by making the berry compote. In a saucepan over high heat, add 1 1/2 cups of mixed berries, lemon juice, and Truvia Sweet Complete Granulated All-Purpose Stevia Sweetener. Bring to a low boil; cook for 5-6 minutes. Stir in the rest of mixed berries and remove from the heat. Set aside. Cream Cheese Filling: In a medium bowl, combine the cream cheese filling ingredients. Beat until well combined. Place the in the fridge until ready to use. Crepe Batter: In a large bowl, whisk together the crepe batter ingredients until smooth. Heat a large skillet over medium heat; grease with butter. Using a 1/3 measuring cup, pour the batter into the pan. Gently lift the pan and move it in a circular motion until the batter is evenly spread around the bottom. Cook for 1-2 minutes, until no longer glossy. Lift the edge, and flip it over. Cook for another 1-2 minutes, until lightly golden, then slide into a plate. Repeat with the remaining batter. Blintzes: Place a big spoonful of the cream cheese filling onto a crepe. Fold both sides in, then roll up like a burrito. Repeat with the remaining crepes and filling. Melt butter in a pan over medium heat. Once hot, place the blintzes on the pan seam-side down. Cook for 1-2 minutes on each side, until golden. Serve with a dusting of Truvia Sweet Complete Confectioners Sweetener and the berry compote. Enjoy!View original recipe
