Sourdough Tortilla Smash Burger Tacos

What you need

lb ground beef

tsp onion powder

tbsp pickle juice

tsp paprika

tsp dijon mustard
oz gouda
cup mayonnaise

pinch black pepper

cup sourdough starter

tsp worcestershire sauce

cup lettuce

cup water

cup olive oil

tbsp pickle

tsp garlic powder

cup all purpose flour
tsp salt
tsp salt & pepper

Instructions
Prepare the sourdough tortilla dough. In a large bowl, mix together the sourdough discard, olive oil, and water. Add in the flour and salt, and mix until a dough forms. Knead for 1-2 minutes, until there are no dry spots and the dough is smooth. Cover with a damp paper towel, and rest at room temp for 30 mins. Make the burger sauce by combining all of the ingredients in a small bowl, and mixing until well combined. Place into the fridge until ready to use. Cook the tortillas. Preheat a large skillet to medium-high heat. Lightly flour a surface and turn the dough over. Divide into 10 pieces. Roll each piece of the dough out into a thin circle (~1/8” thick). Dry cook individually for ~1 minute on each side. Flip when the bubbles appear and the edges are firm. Remove from the pan and place onto a plate or wrap in foil until ready to use. Make the smash burger tacos. Portion the meat into 4, 3.5oz balls. Season with salt and pepper to taste. Heat a pan over high heat. Once hot, place a ball of beef onto the pan. Quickly place a sourdough tortilla on top of the beef, and smash it down until very thin, using a large bowl, spatula, or burger press. Cook for ~3 mins, or until the beef is darkened and crisp. Use a spatula to flip, reduce the heat to medium, and add cheese on top of the beef. Cover and allow the cheese to melt, for ~1-2 more minutes. Remove from the pan and top with lettuce, pickles, and the homemade burger sauce. Enjoy!View original recipe
