Pancake tacos may be my new favorite obsession??? These are fluffy, soft, lemony, studded with poppy seeds, and filled with the most simple and delicious blueberry collagen peptides yogurt 🤤 everything I could want in a breakfast and more 🤎

What you need

protein powder

tsp baking powder

tsp baking soda
brown egg

cup skim milk greek yogurt

lemon

tbsp honey

tsp vanilla extract
tsp poppy seed

blueberry
Instructions
In a medium bowl, combine all ingredients for the pancakes, being careful not to overmix! Heat a large skillet over medium-low heat. Lightly grease the pan with butter or coconut oil. Pour ¼ cup of the batter onto the heated pan, and cook the first side for 1-2 minutes. Flip and cook on the other side for another 1-2 minutes. Repeat until the batter is gone. Once the pancakes are done, make the blueberry collagen peptides yogurt topping. Heat the blueberries in the microwave for ~20 seconds, until their juices start to release. Add in the yogurt and collagen peptides, and mix Plate the pancakes and make them into the shape of a taco. Fill the pancake tacos with the blueberry collagen peptides yogurt topping, extra blueberries, granola, maple syrup, and/or any other desired toppings. Enjoy!View original recipe
