What you need

tbsp salted butter
egg

cup all purpose flour

tsp baking soda

cup heavy cream

tsp vanilla extract

cup granulated sugar

tsp salt
cup Pistachio Cream

tsp baking powder

cup brown sugar
cup Kataifi

cup semi sweet chocolate chips

oz pistachio nuts
Instructions
Preheat the oven to 350F. Grease an 8x8” baking pan with butter, then line with parchment paper. Cookie base: Add the butter to a saucepan over medium-high heat. Allow to melt & slightly brown (~5 mins), stirring frequently. Remove & pour into a large bowl. Cool slightly. In a medium bowl whisk together the flour, baking soda, baking powder, and salt. Set aside. Add both sugars to the brown butter & whisk. Add the egg & whisk well until combined. Add in the heavy cream and vanilla. Whisk to combine. Add the dry ingredients to the wet; gently fold. Fold in chocolate chips. Scoop the dough into the baking pan and spread. Bake at 350F for 22-27 mins, until lightly golden. Remove & cool while you prepare the pistachio filling & ganache. Pistachio filling: In a large pan over medium heat, melt the butter. Add the kataifi & toast until golden & crispy, stirring frequently. Transfer to a bowl & cool. Then add the pistachio cream; mix until combined. Ganache: Place the chocolate chips into a large bowl. Heat the heavy cream in a saucepan until it just begins to boil, then pour it over the chocolate chips. Let sit for 5 mins, then stir until smooth. Assemble: Press the pistachio filling over the cookie layer, spreading evenly. Then, pour the chocolate ganache on top & spread. Garnish with chopped pistachios.
