S’MORES WAFFLE SANDWICHES

I don’t think anyone will need convincing but just in case… fluffy and crispy graham cracker waffles, soft mini marshmallows and melty chocolate chips in every gooey and delicious bite

What you need

mini marshmallows

cookie

salt

vanilla extract

baking powder

sugar

coconut oil

milk

gluten free all purpose flour

egg
Instructions
In a large bowl, combine the eggs, flour, milk, coconut oil, sugar, baking powder, vanilla, and salt. Whisk until smooth. Then, add in the crushed graham crackers and mix until fully incorporated. Preheat your waffle iron. Once preheated, spray with cooking spray, and pour enough batter into each section of the waffle maker, making sure the batter spreads out evenly to the edges. Close the lid and cook until desired crispiness, about 4-5 minutes, until golden brown. Once done, lift the lid. Then, place a couple of mini marshmallows and chocolate chips in the center of half of the waffles in the waffle maker. Take the remaining half of the waffles, and place them on top of the ones with the mini marshmallows and chocolate chips to create a ‘sandwich.’ Close the lid of the waffle maker again, and allow to cook for ~1 minute to melt the marshmallows and chocolate chips. Carefully life the s’mores waffle sandwiches out of the waffle iron. Repeat with remaining batter, mini marshmallows, and chocolate chips. Plate and serve warm. Enjoy!View original recipe
