What you need
egg

dried thyme

cup parmesan cheese

cup plain greek yogurt

tsp salt

tsp baking soda

tsp aluminum-free baking powder

cup gluten free all purpose flour
Instructions
Preheat oven to 375F. Line a small baking baking with parchment paper; set aside. Start by making the dough. In a large bowl, combine the flour, baking powder, salt, and greek yogurt. Mix together until a dough forms. If the dough seems too sticky, add in 1 tbsp more flour at a time, until the dough comes together and is moldable without sticking to your hands too much. Lay the dough on a floured surface and knead with your hands a couple of times. Divide the dough into 12 equal-sized pieces. Shape each piece into a ball, and then use your finger to poke a hole through the middle. Stretch the hole slightly to widen and create the standard bagel shape. Place on the prepared baking sheet. Repeat with remaining dough balls. Brush the tops of the mini bagels with the egg wash. Then, sprinkle grated parmesan and dried thyme on top of each. Bake at 375F for 18-22 minutes, or until the tops are golden brown. Serve warm with butter or cream cheese, if desired. Enjoy!View original recipe
