What you need

ground cinnamon

banana

salt

pumpkin pie spice

coconut sugar

gluten free all purpose flour

vanilla extract

sweet butter

pumpkin puree
Instructions
Preheat waffle iron. In a small bowl, combine the granulated sugar and cinnamon. Set aside. In a large bowl, whisk together the water, pumpkin puree, butter, ad vanilla. Then, add in the flour, sugar, pumpkin pie spice, and salt. Use a wooden spoon or spatula to fold int he dry ingredient until well combined. Spray the waffle iron with nonstick cooking spray. Add enough batter to slightly cover the bottom of each waffle section. Then, place 1 banana slice in the middle of each and press down. Finally, pour more batter on top to cover the banana and fill the waffles section. Cook the pumpkin churro waffle bites until golden brown. Once done, immediately roll in the cinnamon sugar mixture to coat. Repeat with the remaining batter and banana slices. Serve with maple syrup if desired. Enjoy!View original recipe
