Unpopular opinion: I’ve never really been a huge popover girl BUT these churro popovers are my love language, okay? Fluffy and soft popovers rolled in cinnamon sugar are made for the holidays 🤤

What you need

tbsp ground cinnamon

cup sugar

tsp iodized salt

tsp vanilla extract

brown egg

cup milk

tbsp salted butter
Instructions
Preheat oven to 450F. Place 1 tsp butter in each cup of a 12-cup muffin pan. Transfer the pan to the oven for 3-5 minutes to melt the butter. Heat the milk in the microwave for 1 minute until it’s lukewarm. Add the milk, flour, 1 tbsp melted butter, eggs, vanilla extract, and salt to a blender (I used my @nutribullet Pro 900) and blend until the batter is smooth. Carefully remove the muffin pan from the oven and gently swirl the butter around to grease the cups. Pour and fill each cup, filling each about ¾ full. Bake for 15-18 minutes or until golden brown. Remove from the oven and let rest for 5 minutes. Then, run a knife around the edges to loosen. Brush each popover with melted butter, and then roll to coat in the cinnamon sugar mixture.
