Delicious salted caramel oatmeal chocolate chip cookie bars, perfect for a treat, featuring a layered cookie dough base, dark chocolate chips, and a smooth salted caramel topping.

What you need

tsp baking soda
cup ap flour

tsp baking powder

egg yolk

cup maple syrup

tsp vanilla extract

cup dark chocolate chips

tbsp coconut oil

cup brown sugar

cup almond butter

pinch salt

cup granulated sugar

tsp coarse sea salt

cup salted butter

cup semisweet chocolate chips

Instructions
Preheat the oven to 350F. Grease and line an 8x8” baking pan with parchment paper; set aside. In a medium bowl, whisk together the oats, flour, baking powder, baking soda, and salt. Set aside. In a separate large bowl, cream the butter and sugars until smooth. Mix in the egg, egg yolk, and vanilla. Add the dry ingredients to the wet, and mix until just combined. Fold in the 1/2 cup of semi-sweet chocolate chips. Spread 2/3 of the dough into the bottom of the prepared baking pan. Bake at 350F for 8-10 mins. Place the rest of the dough into the fridge. Mix together the ingredients for the salted caramel until smooth. After the cookie dough has been in the oven for 8-10 mins, remove. Immediately top with a layer of dark chocolate chips, and then pour the caramel all over. Top with dollops of the leftover cookie dough from the fridge. Bake at 350F for 20-25 mins, or until light golden. Cool to room temp, then chill in the fridge for ~1 hr. Sprinkle with flaky sea salt, and divide into 16 bars. Serve and enjoy!View original recipe
