Instructions
Preheat oven to 350F. Spray a mini loaf pan or a standard loaf pan and set aside. In a large bowl, whisk together the mashed bananas, eggs, greek yogurt, maple syrup, olive oil, and vanilla extract until well combined. In a separate medium bowl, whisk together the oat flour, cinnamon, baking powder, baking soda, and salt. Add the dry ingredients to the wet, and use a wooden spoon to mix until well incorporated and the batter is somewhat smooth. In a small bowl, combine the granulated sugar and cinnamon for the cinnamon crunch topping. For mini loaves, use a 1/2 cup to scoop the battering the batter into each mini loaf well. Then, sprinkle the cinnamon sugar mixture on top of each for the cinnamon crunch topping. If using a standard loaf pan, pour the batter into the prepared loaf pan. Then, sprinkle the top with the cinnamon sugar mixture. For mini loaves, bake for 28-32 minutes. For a standard loaf pan, bake for 45-50 minutes. If the top starts to about halfway through, add foil to the top. For both, bake until golden brown or until a toothpick inserted in the middle comes out clean. Let cool in the loaf pan for 10 minutes, then remove and transfer to a wire cooling rack. Serve with a spread of butter and a drizzle of honey if desired. Enjoy!View original recipe
