What you need

cup apple pie filling

tbsp granulated sugar
tsp dried apples

tbsp baking powder

tsp baking soda

cup all purpose flour

cup water
cup sourdough starter

tbsp salted butter

tsp ground cinnamon

cup buttermilk
tsp cornstarch

tbsp brown sugar

tsp salt
tsp apple pie spice

cup cake flour
Instructions
Preheat the oven to 425F. Lightly grease a 10” round baking pan with avocado oil; set aside. Prepare filling & topping. In a medium saucepan over medium heat, melt the butter. Add the chopped apples, and the rest of the ingredients (brown sugar, water, all-purpose flour, cinnamon, apple pie spice, cornstarch). Stir well. Cover and cook until apples are soft. Remove from the heat; set aside. In a large bowl, whisk together the all-purpose flour, cake flour, baking powder, baking soda, sugar, and salt. Add in the avocado oil shortening, and use a pastry cutter to cut the shortening into the flour mixture, until crumbly and resembles pea-sized chunks. Add the buttermilk, sourdough discard, and 1/2 cup apple pie filling (reserve rest for topping). Mix, then use your hands to knead and fold until combined (it will be sticky). Use a 1/2 cup to scoop the dough & place into the prepared pan. Brush biscuits with melted butter, then spread the rest of the apple pie filling on top. Bake at 425F for 20-25 mins, until golden brown. Remove from the oven. Make the maple vanilla bean glaze by whisking together the ingredients in a medium bowl (note: glaze recipe is on the website).
