What you need

Instructions
Preheat oven to 350F. Line a baking sheet with parchment paper; set aside. Start by making the cheesecake filling. In a medium bowl, beat the softened cream cheese. Add in the sugar, vanilla, egg, and cinnamon, and beat until well combined. Set aside. In a small bowl, combine all of the ingredients for the streusel, and mix to combine. Set aside while you prepare the apples. Using a sharp knife, core the apple and then use a spoon to scoop out more apple so there is enough room for the filling. Divide the cheesecake filling among the apples. Then top the cheesecake filling with the cinnamon pecan oat streusel. Bake for 35-45 minutes, or until the apples are soft. While baking, combine the ingredients for the vegan salted caramel in a small bowl, and mix until smooth. Serve the apples warm with a drizzle of the vegan salted caramel. Enjoy!View original recipe
