What you need

cup chocolate chips

tsp baking soda

tsp vanilla extract

pinch salt

brown egg

cup rolled oats

cup salted butter
cup light-brown sugar

cup sugar
cup vegan chocolate chips
Instructions
Preheat oven to 350F. Line a baking sheet with parchment paper; set aside. In the bowl of stand mixer or with a hand mixer, beat the butter, sugar, and brown sugar together until smooth and creamy, and no clumps are left. Add in the egg and vanilla, and continue to stir to combine. Then, add in the flour, oats, baking soda, and salt. Mix to combine. Fold in the chocolate chips/chunks. If you want to stuff the cookies, use an ice cream scoop to scoop out a ball of dough, use your thumb to flatten and make an indent in the middle, and place a chocolate truffle in the middle. Then, scoop another ball of dough to place on top of the truffle, and use your hands to seal the edges and form into a ball. Place on the prepared baking sheet. Repeat with the remaining cookie dough. If you are not stuffing the cookies, simply use an ice cream scoop to scoop balls of dough onto the prepared baking sheet. Bake for 10-12 minutes, or until the edges are lightly golden. Remove from the oven, allow to cool o the pan for 5 minutes, and then carefully transfer to a wire cooling rack.
