Healthy Glazed Blueberry Donuts
My absolute favorite thing to do when Iām home from school is bake and cook; trying all sorts of recipes! This afternoon I wanted to try something I never had before, DONUTS!! You can never pass up a good donut, right? On top of that, these are HEALTHY glazed blueberry donuts! They were made with oat flour (I just take whole oats and put them in the food processor to turn into a flour). Whole oats are extremely healthy as they owe their reputation to a type of insoluble fiber comprised of indigestible sugars called beta-glucans. Beta-glucans have been proven to lower risk factors for heart disease such as high cholesterol and high blood pressure. In addition to that, blueberries are viewed to have the highest levels of antioxidants among all vegetables and fruits! These were super simple and easy to make, and turned out to be so delicious! What you need

cup oat flour

tsp vanilla extract

tbsp unsweetened almond milk

oz cream cheese

fl oz olive oil cooking spray
egg

cup powdered sugar

tsp apple cider vinegar
cup fresh blueberries

cup simple syrup
Instructions
Preheat your oven to 350F and spray a donut pan with cooking spray, then set aside. Sift your flour into a large mixing bowl and then mix in the syrup, eggs, baking powder, and apple cider vinegar. Once mixed to a smooth consistency (should be on the thicker side), fold in the blueberries. Pour the batter into a large ziploc bag and cut a corner off. Pipe the batter into the donut pan. Bake for 12-15 minutes, or until a toothpick can be stuck in without any batter on it when pulled out. Let donuts cool in the pan for 5 minutes and then move them to a cooling rack. For the glaze, combine cream cheese, powdered sugar, vanilla extract, and almond milk in a separate bowl and mix until smooth. Once cooled, dip the donuts in the prepared glaze.
