BROWN BUTTER POPOVERS W/ SALTED MAPLE CINNAMON BUTTER

What you need

avocado oil

gluten free all purpose flour

fine sea salt

unsalted butter

Instructions
Start by browning the butter. Add the butter to a saucepan over medium-high heat. Allow to melt and slightly brown (~3-5 minutes). Remove from the heat and allow it to cool slightly. Then, make the popover batter. Add the eggs, milk, salt, flour, and slightly cooled brown butter to a blender. Blend until smooth and frothy. Let the batter rest for 15 minutes while the oven preheats. Preheat the oven to 450F. Place a popover pan on a baking sheet, and place into the oven for 5 minutes while the oven is preheating. Remove and IMMEDIATELY spray the hot pan with nonstick cooking spray, making sure to get inside the wells and on the outside rim. Immediately pour the rested batter into the popover wells, dividing evenly and filling each just over half way full. Bake at 450F for 20 minutes, the reduce the heat to 350F (DO NOT open the oven door) and bake for another 10-15 minutes, until deep golden brown. Remove from the oven. Then remove from the pan and pierce the bottoms of the popovers with a knife to release steam. While the popovers are baking, make the salted maple cinnamon butter. Beat together all of the ingredients in a medium bowl until well combined and the butter is fluffy. Serve the popovers warm with the salted maple cinnamon butter and flaky sea salt.
