What you need

ground cinnamon

apple

vanilla extract

maple syrup

skim milk greek yogurt

unsweetened almond milk

egg

unsalted butter

salt

baking soda

baking powder

Instructions
Start by making the apple pie filling. Add the diced apple and water to a large pan over medium heat. Cover and let cool until the apples are soft (~5 minutes). Add in maple syrup and cinnamon. Mix and allow to simmer over medium heat until the liquids are slightly thickened. Remove from heat and mix in the vanilla. Allow to cool and set aside. Preheat your waffle iron. To make the waffle batter, in a large bowl, whisk together the flour, baking powder, baking soda, and salt. In a separate medium bowl, whisk together the eggs, greek yogurt, milk, maple syrup, and vanilla. Then, whisk in the melted butter. Pour the wet ingredients into the dry and whisk until just incorporated (it’s okay if there are a few lumps). Spray the waffle iron with nonstick cooking spray. Add enough batter to cover the bottom of each waffle section. Then, pour a spoonful of the apple pie filling in the middle of each. Finally, pour more batter on top to cover the apple pie filling. Cook the waffles until golden brown. Repeat with remaining batter and apple pie filling. Make the maple glaze by whisking all of the ingredients together in a small bowl. Plate the waffles and top with more of the apple pie filling (if desired), and drizzle with the maple glaze. Enjoy!View original recipe
